1 & 1/2 lbs boneless, skinless chicken thighs
3-4 garlic cloves, minced
28 oz diced tomatoes
6 oz tomato paste
1/2 red bell pepper, thinly sliced
1/2 green bell pepper, thinly sliced
1 small onion, diced
1 tsp dried oregano
1 tsp dried basil
1 tsp salt
1/2 tsp pepper
1 bay leaf
1/4 cup water
1 package of your favorite pasta, prepared as directed on box.
Start by seasoning chicken well with salt and pepper. Add the rest of ingredients EXCEPT for the pasta. Stir well to combine.
Cover and set crock pot on LOW for 7 hours or on HIGH for 4 hours.
Serve over a bed of your favorite pasta.
